Instructions:
1. Preheat your oven to 375°F (190°C). Grease a 9×13” baking dish with cooking spray or butter.
2. In a large skillet over medium heat, sauté the diced onion in a bit of oil for 2-3 minutes until softened. Add minced garlic and cook for another 30 seconds.
3. Add the ground beef or turkey to the pan. Cook until browned and fully cooked, breaking it apart with a spoon. Season with salt, pepper, and paprika (and thyme, if using). Drain excess fat.
4. Reduce heat to low. Stir in both cans of soup, sour cream, and milk. Mix until well combined and creamy.
5. Fold in 1 cup of shredded cheese and the frozen mixed veggies. Stir until evenly distributed.
6. In your prepared casserole dish, layer the bottom with tater tots (or cooked pasta/hash browns). Pour the meat-vegetable mixture evenly over the base. Use a spatula to smooth everything out.
7. Sprinkle the remaining 1 cup of shredded cheese on top.
8. Bake uncovered for 35–40 minutes or until the top is golden brown and bubbly.
9. Let rest for 5–10 minutes before serving. Garnish with parsley or green onions if desired.
