🌽 Creamy & Comforting Mexican Corn Soup (Elote-Inspired) 🌶️🥣

Craving something cozy, flavorful, and easy to whip up? This Mexican Corn Soup is everything you love about elote—sweet corn, zesty lime, spicy chili, and creamy cheese—served in a warm, velvety bowl. Perfect as a starter, side, or even a quick main dish, this soup brings a fiesta of flavors with every spoonful!

Ingredients:

– 4 cups fresh, frozen, or canned sweet corn (about 5 ears if using fresh)
– 1 tbsp olive oil or butter
– 1 small white onion, diced
– 2 cloves garlic, minced
– 1 small jalapeño, seeded and finely diced (optional for heat)
– 1 tsp smoked paprika
– 1 tsp ground cumin
– Salt & pepper, to taste
– 1 ½ cups vegetable or chicken broth
– 1 cup whole milk or heavy cream (for extra creaminess)
– ¼ cup crumbled Cotija or feta cheese
– Juice of 1 lime
– Fresh cilantro, chopped (for garnish)
– Chili powder or Tajín, for garnish
– Extra lime wedges, for serving

Instructions:

1. Sauté the aromatics:
In a large pot, heat olive oil or butter over medium heat. Add the diced onion and cook until translucent, about 3–4 minutes. Stir in the garlic and jalapeño and sauté for another minute until fragrant.

2. Add spices:
Sprinkle in the cumin, smoked paprika, salt, and pepper. Stir well to coat the onion mixture with the spices.

3. Cook the corn:
Add the corn kernels to the pot and stir to combine. Cook for 5–6 minutes, allowing the corn to slightly caramelize and soak in the flavors.

4. Pour in broth & simmer:
Add the vegetable or chicken broth. Bring to a simmer and let it cook for 10–12 minutes so the flavors meld together.

5. Blend the base:
Use an immersion blender to partially purée the soup directly in the pot (or transfer about half to a blender and blend until smooth, then return). This gives a creamy yet chunky texture.

6. Stir in dairy:
Reduce heat to low. Add milk or cream and stir gently until fully incorporated. Simmer for 5 more minutes. Adjust seasoning to taste.

7. Final touches:
Stir in lime juice and sprinkle in half of the crumbled Cotija or feta cheese.

8. Serve & garnish:
Ladle soup into bowls. Top with the remaining cheese, chili powder or Tajín, fresh cilantro, and a squeeze of lime juice.

Optional Add-ins:

– Diced avocado
– Tortilla strips or crumbled tortilla chips
– A dollop of sour cream or Mexican crema
– Roasted poblano peppers for smoky flavor

✨ Tip: Want it vegan? Use veggie broth, coconut cream or oat milk, and replace cheese with a dairy-free alternative.

This Mexican Corn Soup is the perfect blend of sweet, spicy, creamy, and tangy—it’s like a warm hug in a bowl. Serve it with crusty bread or tacos for the ultimate comfort meal!
