1. Rinse the sweet potatoes and slice them into 1/2-inch rounds, leaving the skin on or peeling if preferred 🥔.
2. Preheat the oven to 400°F (200°C) 🔥.
3. In a bowl (or a ziplock bag), toss the sweet potato slices with the melted butter, cinnamon, salt, and pepper to coat evenly 🍲.
4. Lay the slices in a single layer on a baking sheet, leaving space between for even browning. Bake for 25-30 minutes, or until they are tender when pierced with a fork (baking time may vary based on thickness) ⏳.
5. In a separate bowl, combine the maple syrup, chopped walnuts, cinnamon, and thyme 🥄.
6. Take the sweet potatoes out of the oven and top each slice with about a teaspoon of the walnut-maple mixture 🍯.
7. Put the tray back in the oven for another 8-10 minutes to let the toppings caramelize 🔄.
8. Once done, sprinkle the warm sweet potatoes with crumbled gorgonzola cheese 🧀.
