1. Cook the Meat:

– In a large skillet, heat olive oil over medium heat.
– Add the diced onion and sauté until translucent, about 3-4 minutes.
– Add minced garlic and cook for an additional minute.
– Add the ground beef or chicken, breaking it apart with a spatula. Cook until browned and fully cooked through.

2. Season the Meat:

– Stir in the taco seasoning and a splash of water (as per seasoning packet instructions).
– Mix well and let it simmer for about 5 minutes until the flavors meld.

3. Prepare the Filling:

– In a large bowl, combine the cooked rice, black beans, corn, and half of the shredded cheese.
– Add the cooked meat mixture and stir until well combined.

4. Assemble the Burritos:

– Lay a tortilla flat on a clean surface.
– Spoon a generous amount of the filling mixture onto the center of the tortilla.
– Top with salsa, avocado slices, and a sprinkle of fresh cilantro.
– Fold in the sides of the tortilla and then roll it up tightly from the bottom to the top.

5. Heat the Burritos:

– In the same skillet, place the burritos seam-side down and cook over medium heat for about 2-3 minutes on each side until golden brown and crispy.
– Sprinkle the remaining cheese on top of the burritos and cover the skillet for a minute to melt the cheese.

6. Serve:

– Cut the burritos in half and serve with extra salsa, sour cream, and cilantro on the side.
