Vegetable Beef Soup

Heat olive oil in a large pot over medium heat. Add beef cubes and brown on all sides, about 5-6 minutes. Remove beef and set aside.
In the same pot, add the chopped onion and garlic, sautéing until softened, about 3 minutes.
Add the carrots, celery, and potatoes, stirring occasionally for about 5 minutes.
Return the beef to the pot, then add the diced tomatoes, beef broth, thyme, bay leaf, salt, and pepper.
Bring the mixture to a boil, then reduce heat and let it simmer covered for about 1 hour, or until the beef is tender.
Stir in the green beans and peas and simmer uncovered for another 10-15 minutes, until the vegetables are fully cooked.
Remove the bay leaf before serving. Adjust seasoning to taste.
