1. Prepare the Garlic Tzatziki:
• Mix Greek yogurt, minced garlic, chopped cucumber, olive oil, and lemon juice in a bowl.
• Add chopped dill and season with salt to taste. Stir well and chill in the refrigerator while you prepare the fritters.
2. Make the Fritters:
• Put the grated zucchini in a colander, sprinkle with a bit of salt, and let it sit for 10 minutes. Then, squeeze out excess moisture.
• In a large bowl, combine the drained zucchini, chopped spinach, crumbled feta, minced herbs, beaten eggs, minced scallions, and minced garlic. Mix everything together.
• Add flour, baking powder, salt, and pepper to the zucchini mixture. Stir until everything is well combined.
3. Cook the Fritters:
• Heat some olive oil in a large frying pan over medium-high heat.
• Spoon the fritter mixture into the hot oil, flattening each one gently with the back of the spoon to make round patties.
• Fry the fritters until they’re golden brown on each side, which should take about 3-4 minutes per side.
• Once they’re cooked, remove the fritters from the skillet and place them on a paper towel-lined plate to soak up any extra oil.
4. Serve:
• Serve the warm fritters with a nice dollop of the chilled garlic tzatziki on the side. Enjoy!
