Big Apple Fritters

Instructions:

  1. Prepare the Apples:
    • In a bowl, toss the diced apples with lemon juice. This will prevent them from browning and add a bit of tartness.
  2. Make the Batter:
    • In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, salt, cinnamon, and nutmeg.
    • In another bowl, whisk the eggs, milk, and vanilla extract until combined. Add the melted butter and mix well.
    • Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
    • Fold in the diced apples gently.
  1. Fry the Fritters:
    • Heat about 2-3 inches of vegetable oil in a deep skillet or pot over medium-high heat. The oil should reach 350°F (175°C) for frying.
    • Using a large spoon or an ice cream scoop, carefully drop spoonfuls of the batter into the hot oil. Do not overcrowd the skillet; fry a few fritters at a time.
    • Fry each fritter for about 2-3 minutes per side, or until golden brown and cooked through.
    • Use a slotted spoon to remove the fritters from the oil and place them on a paper towel-lined plate to drain any excess oil.
  2. Prepare the Glaze:
    • In a medium bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth.
  3. Glaze the Fritters:
    • While the fritters are still warm, dip them into the glaze, coating them entirely.
    • Place the glazed fritters on a wire rack set over a baking sheet to allow any excess glaze to drip off.

  1. Serve:
    • Let the glaze set for a few minutes before serving. Enjoy your Big Apple Fritters warm or at room temperature!

Tips:

  • Ensure the oil is at the right temperature. If it’s too hot, the fritters will brown too quickly on the outside while remaining uncooked inside.
  • You can adjust the spices (cinnamon, nutmeg) according to your taste.
  • For an extra touch, sprinkle some powdered sugar over the fritters before serving.

Enjoy your homemade Big Apple Fritters!
