Easy and Hearty Potatoes with Spinach and Eggs: A Comforting Dinner Recipe

Ingredients:

4 medium potatoes, peeled and sliced or cubed
1 onion, chopped
250g spinach, washed and roughly chopped
4 chicken eggs
100g soft cream cheese
150g hard mozzarella cheese, grated
Vegetable oil
Salt, to taste
Ground black pepper, to taste
Dried ground garlic, to taste.

Directions:

1. Preheat the Oven:

Preheat your oven to 180°C (350°F).
2. Prepare the Potatoes:

Peel and slice or cube the potatoes. Set aside.
3. Cook the Onions and Spinach:

In a large skillet, heat some vegetable oil over medium heat.
Add the chopped onion and cook until translucent.
Add the spinach and cook until wilted. Season with salt, ground black pepper, and dried ground garlic.
4. Cook the Potatoes:

In a separate pan, boil the potatoes in salted water until just tender but not fully cooked. Drain and set aside.
5. Prepare the Egg Mixture:

In a bowl, beat the eggs and mix in the soft cream cheese. Season with a pinch of salt and pepper.
6. Assemble the Dish:

In a greased baking dish, layer the potatoes.
Spread the cooked onion and spinach mixture over the potatoes.
Pour the egg and cream cheese mixture evenly over the top.
Sprinkle the grated mozzarella cheese over the entire dish.
