Trim the pork loin of excess fat and season it with salt and pepper. Set aside.
Heat a large pan over medium-high heat. Add the vegetable oil. Once hot, add the pork loin and brown each side for 2-4 minutes or until golden.
Transfer the pork loin to the slow cooker. Rub the minced garlic over the pork. Add the soy sauce and pineapple chunks with their juice. Sprinkle the brown sugar evenly over the top.
Cover the slow cooker and cook on low for 4-6 hours, until the pork is tender and can be sliced.
Note:
For an extra tender, shredded pineapple pork, cook on low for 8-10 hours. During cooking, lift the lid occasionally and ladle the juices over the pork to keep it moist. After shredding the pork, return it to the slow cooker and cook on low for an additional hour.
