Salmon, Shrimp, Cheesy Broccoli with Corn


Instructions:

Prepare the Salmon and Shrimp:
Preheat the oven to 400°F (200°C).
Place the salmon fillets and shrimp on a baking sheet lined with parchment paper.
Drizzle the olive oil over the salmon and shrimp, then sprinkle with minced garlic, lemon zest, salt, and black pepper.
Bake in the preheated oven for 12-15 minutes, or until the salmon is cooked through and the shrimp are pink and opaque.
Prepare the Cheesy Broccoli:
While the salmon and shrimp are baking, steam the broccoli florets until they are tender but still bright green, about 5-7 minutes.
In a medium saucepan, melt the butter over medium heat. Stir in the flour and cook for 1-2 minutes, until bubbly.
Gradually whisk in the milk, stirring constantly until the mixture is smooth and begins to thicken.
Add the shredded cheddar cheese and grated Parmesan cheese, stirring until the cheese is melted and the sauce is smooth. Season with salt and black pepper to taste.
Pour the cheese sauce over the steamed broccoli and stir to coat evenly.
Prepare the Corn:
In a small saucepan, melt the butter over medium heat.
Add the corn kernels and cook for 3-5 minutes, until heated through.
Season with salt and black pepper to taste.
Serve:
Arrange the baked salmon and shrimp on a serving platter.
Serve the cheesy broccoli and corn alongside the seafood.
Garnish with chopped fresh parsley and lemon wedges for extra flavor.
