CRAB TWICE BAKED POTATOES RECIPE:

Preheat oven to 450 degrees. Scrub potatoes. Take a fork and poke holes all over potatoes.

Rub with olive oil and add salt and pepper.

Bake for about one hour or until potatoes are tender. If they are not tender, return to the oven for 5-10 minutes or until so. Set aside to cool.

Reduce oven to 400 degrees.

Scoop the center of the potato out leaving a 1 inch border. Take the part of the potato you scooped out and add to a bowl.

Add cream cheese, butter, cajun seasoning and stir until well blended. Add heavy cream to make a velvety texture and add cheeses.

Gently add crab meat to mixture.

Fill potatoes with mixture and return to oven for 15-20 minutes until slightly browned.
