1. Preheat the oven to 180°C.
2. We peel the carrots and grate them.
3. We reverse the result in the glass of a food processor or a blender, we add the sunflower oil and we grind until obtaining a homogeneous paste.
4. In a bowl, beat eggs with sugar until the mixture increases their volume.
5. Combine the two mixtures and add the vanilla extract.
6. We incorporate the sifted flour and yeast and integrate well.
7. We greased a mold with oil and spilled the dough.
8. Bake for 30-35 minutes, take out of the oven and leave to cool.
9. We sprinkle with icing sugar, cut into portions and serve.
